egg yolk dressing<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">RECIPE:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients (4 portions)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">800g mixed Exotic mushrooms cut into ornate bite sized pieces<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4 cloves of peeled garlic micro planed into 75 ml olive oil<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00bd bunch of finely chopped sage<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 bunch chopped parsley<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">75g best quality unsalted butter<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 lemons juices<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">150ml Reduced concentrated chicken stock<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Salt &amp; pepper<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4 free range organic egg yolks<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">75 g finely shaved truffled pecorino or other truffled cheese or Plain pecorino<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5-10 g or to taste freshly shaved winter truffles<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Method<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat a wide non-stick pan add the larger cut mushrooms to the pan as they take longer to cook<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now add the garlic infused olive oil as they begin to soften &amp;caramelize add the smaller mushroom pieces &amp; some herbs, butter &amp; toss briskly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now add the lemon juice, seasoning lastly add the stock bring all the juices to the boil &amp; serve immediately into deepish plates top w finely shaved cheese &amp; truffles lastly arrange an egg yolk into the center of the plate on top of the mushrooms springle w sea salt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve immediately &amp; encourage your guest to break the egg yolk &amp; stir into the warm juices to make a heavenly DIY dressing for the mushrooms.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Paul Wilson has been described as one of the most extraordinary culinary talents in the Commonwealth &amp;
