Slowly add the lemon juice a little bit at a time mixing to incorporate. Season with sea salt and white pepper.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00a0Roll the butter into a log with cling film and place into the fridge to set. The butter can be made in advance and keeps well frozen. Simply cut a slice or two as desired and return to the freezer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For the fish<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4-5 par boiled cocktail potatoes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 portion of skinless barramundi<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 slice of fresh lemon<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">10g baby capers in brine<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5g chopped dill<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 slices lemon and dill butter<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sea salt and white pepper to taste<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Baking paper<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Butchers twine (optional)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Take a sheet of baking paper big enough to fold in over itself and cover your fish fillet as if you were gift wrapping it. Cut the par boiled potatoes in half length ways and place in the centre of the paper. Season the potatoes with sea salt and white pepper. Scatter the baby capers and chopped dill over the potatoes. Then Place a thin slice of the lemon and dill butter on top of the potatoes. Place your fish fillet on the slice of butter, season the fish with sea salt and white pepper, top the fish fillet with another thin slice of the butter and finish with a slice of fresh lemon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now we are ready to wrap the fish up.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fold over the top and bottom edges of your baking paper to make a \u00bd cm lip on the top and bottom of your sheet. Fold the top of the paper to the centre covering the fish and repeat with the bottom. Your fish should be completely covered by the paper. Next, we will fold in the sides and secure with the string.
