Ingredients: (Serves 4)<\/strong>
1kg chicken wingettes
1 tablespoon baking powder
pinch of salt
\u00bd red onion, finely diced
1 lime, zested then juiced
1 avocado, finely diced
4 tomatoes, seeds removed, finely diced
\u00bd bunch of coriander, finely chopped
\u2154 cup reduced-fat Greek yoghurt
1 garlic clove, finely grated
\u00bd cup chipotle chillies in adobo
3 tablespoons honey
2 tablespoons apple cider vinegar
2 teaspoons smoked paprika
2 teaspoons garlic powder<\/p>\n\n\n\n

Method:<\/strong><\/p>\n\n\n\n

    \n
  1. Preheat the oven to 200\u00b0C (fan-forced). Place the chicken wingettes, baking powder and a good pinch of salt in a large bowl. Toss until chicken is well coated, then arrange on a lined baking tray. Bake for 45 minutes or until wings are light golden brown and crispy.<\/li>\n\n\n\n
  2. Meanwhile, for the pico de gallo combine red onion, lime juice and salt in a medium bowl. Set aside for five minutes to marinate. Stir through avocado, tomato, and coriander.<\/li>\n\n\n\n
  3. In a small bowl, stir together yoghurt, garlic and lime zest.<\/li>\n\n\n\n
  4. To make the sauce for the chicken wings, combine chipotle chillies, honey, vinegar, smoked paprika and garlic powder in a small food processor and blitz until smooth. Transfer to a small saucepan over medium heat and cook, stirring occasionally, for 2-3 minutes or until slightly thickened and reduced. Once chicken wings are cooked, pour sauce over chicken and toss until well coated.<\/li>\n\n\n\n
  5. Serve chicken wings with avocado pico de gallo on the side and yoghurt sauce for dipping.<\/li>\n<\/ol>\n\n\n\n
