Herb, Veggie Top and Macadamia Pesto<\/strong><\/p>\n\n\n\n

Serves: 12<\/strong><\/p>\n\n\n\n

Ingredients:<\/strong>
300g of herbs and leaves, chopped
2 cloves garlic
100g roasted macadamias
100g grated parmesan cheese
250ml olive oil
Juice and zest of 1 lemon
1 teaspoon flake salt<\/p>\n\n\n\n

Method:<\/strong>
1) Pre-heat the oven to 160 degrees, roast the macadamias until lightly coloured, set aside to cool.
2) In a mortar and pestle or food processor, add the macadamias, garlic and salt. Beat or blitz together to create a chunky paste.
3) Add the chopped leaves and herbs a bit at a time, pounding or pulsing to break them down and form the base of the pesto.
4) Add grated parmesan, bring the mix together, then add olive oil a bit at a time to stretch the mix out into a pesto.
5) Season with the lemon juice and zest, pus more salt and pepper as required.<\/p>\n\n\n\n

Tasting Notes:<\/strong> Pale straw with light green hue, in colour. On the nose, Lemon curd, mandarin, yellow stone fruit and pineapple. Nectarine and fresh pear take the lead, on the palate, followed by baked apple and hints of sage.
