LAMB SHANKS WITH COUSCOUS SALAD
6 LAMB SHANKS
1 ONION DICED
1 CARROT DICED
1 STICK CELERY DICED
2 CLOVES GARLIC SMASHED
PINCH SMOKED PAPRIKA
PINCH CUMIN
1T BEEF OR CHICKEN STOCK
1 LT TOMATO SUGO
200ML RED WINE STOCK
FLOUR
SALT & PEPPER<\/p>\n\n\n\n

COUSCOUS SALAD
1 \u00bd CUP WATER
1 CUP COUSCOUS
1 TBS OLIVE OIL
1 TBS BUTTER
8 QUEEN GREEN OLIVES SLICED
\u00bd RED CAPSICUM DICED
2 TBS CHOPPED PARSLEY
\u00bd TIN CHICK PEAS
\u00bc PRESERVED LEMON FINELY CHOPPED<\/p>\n\n\n\n

Season the lamb shanks with salt & pepper, roll in flour and seal in hot oil until you get a nice colour. Fry the vegetable in a pan until caramelized.<\/p>\n\n\n\n

Place the shanks & vegetables in a heavy pot, slow cooker or deep tray.<\/p>\n\n\n\n

Cover with the wine, sugo & stock, cook on a low temperature in the oven or stove around 2-3 hours or until the shank becomes very tender.<\/p>\n\n\n\n

Remove the shanks and set aside check the sauce and reduce slightly if necessary.<\/p>\n\n\n\n

place the couscous in a stainless-steel bowl, add salt & pepper & olive oil.<\/p>\n\n\n\n

boil the water and poor over the couscous, cover with a plate or lid and leave for a couple of minutes break up the cous with a fork or your hands add the capsicum, chick peas, olive, preserved lemon, parsley, salt & pepper to the couscous.<\/p>\n\n\n\n

serve the lamb shank with couscous on the side and enjoy.<\/p>\n\n\n\n

Blackcurrant, cassis and earthy notes on the nose are harmoniously married to some tobacco leaf characters that add layers of intrigue and mystery to the wine.
