BAKED POTATO WITH CHILI CON CARNE<\/p>\n\n\n\n

6 LARGE KESTREL POTATO
OIL & SALT
poke holes in the potato with skewer, wrap in foil fire or bake in an oven unwrapped at 170 degrees for about 45 minute until soft inside bake the potato in a camp
THE CHILLI
1100G BEEF MINCE
1 RED ONION
2TBS GARLIC CRUSHED
2 TBS CUMIN
2 TBS SMOKED PAPRIKA
1-4 TBS PUREED CHIPOTLE IN ADOBE SAUCE
1 TIN BLACK BEANS
1 TIN CORN
1 RED CAPSICUM SMALL DICE
1 GREEN CAPSICUM SMALL DICE
4 CUPS CRUSHED TOMATO OR PASSATA
BBQ SAUCE 4 TBS
OIL
SALT & PEPPER
2 AVOCADO
2 LIME JUICE
\u00bd CUP CHOPPED OR PICKED CORIANDER
2 FINELY CHOPPED SPRING ONIONS
6 TBS BUTTER
6 TBS SHREDDED CHEESE<\/p>\n\n\n\n

heat a little oil in a heavy based pan, fry the onion and garlic
add the mince and cook until coloured, add the cumin,
paprika, adobe sauce, crushed tomato & bbq sauce
simmer for about 10 minutes, then add the beans, corn &
capsicum, season with salt & pepper to taste, simmer for 10
more minutes<\/p>\n\n\n\n

prepare the avocado by crushing and add the lime juice and
a little sat & pepper<\/p>\n\n\n\n

cut a slit in the top of the potato, open up and put a spoon of
cheese & butter and mix well
place on a plate and put a big spoon of the chili on top
garnish with avocado & spring onions<\/p>\n\n\n\n
