PRAWNS IN POTATO STRINGS<\/p>\n\n\n\n

12 LARGE SA KING PRAWNS (CLEANED, TAIL ON) \u201cCUTLETS \u201c
SALT & PEPPER
2 LARGE WHITE POTATOES
VEGETABLE OIL<\/p>\n\n\n\n

DRESSING
150ML VIRGIN OLIVE OIL
1 TBLS HONEY
2 TBLS CORIANDER CHOPPED 1 LIME
100ML RED WINE VINEGAR
SALT & PEPPER
1 FRENCH SHALLOT<\/p>\n\n\n\n

SALAD
12 BABY COS LEAVES
3 AVOCADOS
2 CUPS ROCKET
2 TBLS MAYONNAISE<\/p>\n\n\n\n

peel the potato, season the prawns with salt, pepper, use the japanese slicer and wrap the prawns in potato starting from tail to head<\/p>\n\n\n\n

once all the prawns are wrapped blanch in the hot oil at 160<\/p>\n\n\n\n

prepare the dressing by combining all ingredients<\/p>\n\n\n\n

cut the avocado into wedges and place on the plate with lettuce in the centre re-fry the prawns in hot oil at 180 or use the air fryer until crisp<\/p>\n\n\n\n

season the prawns with salt & pepper drizzle the dressing on top salad and around the plate, finish with mayonnaise and place on the salad<\/p>\n\n\n\n
