3 SHEETS BUTTER PUFF PASTRY
375G INSTANT CUSTARD POWDER
1LT COLD WATER
1 TBS VANILLA BEAN PASTE
1 LEMON ZEST
1LT WHIPPED CREAM
30ML STREGA
3 PUNETS FRESH BERRIES (RASPBERRIES, BLUEBERRIES,
STRAWBERRIES)
ICING SUGAR<\/p>\n\n\n\n

bake the puff pastry between sheets of baking paper under the pressure of another tray at 188 degrees for 27 minutes, allow to cool<\/p>\n\n\n\n

prepare the custard cream by whipping the cream with vanilla bean, whip the custard mix with water and place in the fridge<\/p>\n\n\n\n

combine the whipped cream & custard with a spatula<\/p>\n\n\n\n

put the custard cream in a piping bag with a round nozzle<\/p>\n\n\n\n

place the first pastry base on a plate and pipe the cream around the edge in nice drops for first 2 edges and the fill in with cream<\/p>\n\n\n\n

add the second layer of pastry and repeat<\/p>\n\n\n\n

add 3rd layer of pastry and only do drops of cream<\/p>\n\n\n\n

on the outer edge and then a thin layer of cream to fill the pastry<\/p>\n\n\n\n

sprinkle the mixed berries or place to fill the hole, dust with icing sugar and serve<\/p>\n\n\n\n

Tasting Notes: <\/strong>The ‘Der Zweite’ (meaning ‘The Second’ in German) is sourced from a single block of Riesling at Sevenhill in the Clare Valley is a Germanic (Kabinett Style) inspired off dry Riesling, made from 100% free run juice. The nose leaps out of the glass with its trademark bath salts and lavender notes, but is on the palate where it truly goes to the next level – it is perfectly balanced with residual sugar and equal acid, its sweet, but not sickly \u2013 its refreshing and you\u2019ll definitely want to have a second (or maybe third) glass of it. It matches amazingly well with Asian dishes, and anything with chilli in it, but the acid\/sugar balance mean it is also perfect to match with desserts and to be enjoyed after dinner!<\/p>\n","protected":false},"excerpt":{"rendered":"
