{"id":127684,"date":"2025-06-06T09:50:09","date_gmt":"2025-06-06T00:20:09","guid":{"rendered":"https:\/\/cms.fiveaa.com.au\/?p=127684"},"modified":"2025-06-06T09:50:11","modified_gmt":"2025-06-06T00:20:11","slug":"pavlova-with-mandarin-and-rhubarb-compote","status":"publish","type":"post","link":"https:\/\/cms.fiveaa.com.au\/lifestyle\/pavlova-with-mandarin-and-rhubarb-compote\/","title":{"rendered":"Pavlova with mandarin and rhubarb compote"},"content":{"rendered":"\n<p><strong>Ingredients: (Serves 4)<br><\/strong>2 Egg whites<br>\u2153 Cup caster sugar<br>4 Pieces of rhubarb, cut into 3-4cm pieces<br>2 Tablespoon brown sugar<br>1 Star anise<br>\u2153 Cup thickened cream<br>\u00bd Cup thick Greek yoghurt<br>1 Teaspoon vanilla paste<br>2 Mandarins, segmented<br>1 Blood orange segmented<br>2 Tablespoons pepitas, to serve<\/p>\n\n\n\n<p><strong>Method:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Pre-heat oven to 100\u00b0C. Whisk egg whites until firm peaks form. Whisk in sugar and continue to beat until stiff peaks form. Pipe meringue mixture into 4 circles onto a lined baking tray, and cook in the oven for 60-80 minutes or until crisp, turn off oven and allow meringues to cool in the oven.<\/li>\n\n\n\n<li>Meanwhile, in a small saucepan, add the rhubarb, brown sugar and star anise and cook over a low heat until the fruit has broken down. Allow to cool and set aside.<\/li>\n\n\n\n<li>In a bowl whip the cream and vanilla to soft peaks.
