270G PRAWN MEAT GREEN
500G CRAB MEAT COOKED OR RAW
200G EGGS
50G SPRING ONIONS CHOPPED
10G PARSLEY CHOPPED
10G CHIVES
135G MAYONNAISE
10G GARLIC CRUSHED
85G PANKO BREADCRUMBS +PLUS EXTRA FOR COATING
SALT & PEPPER<\/p>\n\n\n\n

put the prawn\/crab meat in food processor with a couple of ice cubes and blend until smooth<\/p>\n\n\n\n

add the eggs and blend for a short time<\/p>\n\n\n\n

place the mixture in a bowl and add the remaining ingredients, season with salt and pepper<\/p>\n\n\n\n

cook a little tester to check seasoning<\/p>\n\n\n\n

allow the mixture to firm up in the fridge, about 20 minutes<\/p>\n\n\n\n

form the mix into little cakes like the size of a burger pattie, coat in the extra panko crumbs<\/p>\n\n\n\n

heat a pan with canola or vegetable oil 180 degrees and shallow fry golden on both side place in the oven for 2-3 minutes until they puff up drain on paper towels<\/p>\n\n\n\n

serve with the salsa & some aioli<\/p>\n\n\n\n

Tasting Notes: Inspired by the great wines of Pouilly Fume, in the Loire Valley, this is Sauvignon Blanc done differently. A lifted tropical bouquet jumps out of the glass. Heady pineapple, passionfruit and ripe peaches are underpinned by delicate characters of brioche and cashew nuts derived from lees stirring. It is barrel fermented giving spice, complexity and texture, with fresh tropical fruit varietal characters. Texture and weight are balanced by fresh varietal acid.<\/p>\n\n\n\n
