{"id":129548,"date":"2025-07-24T11:11:05","date_gmt":"2025-07-24T01:41:05","guid":{"rendered":"https:\/\/cms.fiveaa.com.au\/?p=129548"},"modified":"2025-07-24T11:11:05","modified_gmt":"2025-07-24T01:41:05","slug":"zaatar-pork-with-charred-broccolini-and-roasted-carrot-hummus","status":"publish","type":"post","link":"https:\/\/cms.fiveaa.com.au\/show\/on-the-menu\/zaatar-pork-with-charred-broccolini-and-roasted-carrot-hummus\/","title":{"rendered":"Za\u2019atar pork with charred broccolini and roasted carrot hummus"},"content":{"rendered":"\n<p>Ingredients: (Serves 4)<br>2 large carrots, quartered length ways<br>1 tablespoon honey<br>1 tablespoon olive oil, plus 2 tablespoons extra<br>400g can chickpeas, rinsed and drained<br>2 tablespoons tahini<br>1 garlic clove<br>1 lemon, zested and juiced<br>4x 120g pork loin steaks<br>pinch of salt<br>1 tablespoon sumac<br>1 tablespoon toasted sesame seeds<br>2 teaspoons dried oregano<br>2 bunches of broccolini, trimmed<br>1 tablespoon pomegranate molasses<br>\u00bc bunch of parsley, leaves picked<br>\u00bc bunch of mint, leaves picked<br>2 tablespoons roasted almonds, roughly chopped<br>\u00bd pomegranate, seeds removed (optional)<\/p>\n\n\n\n<p>Method:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 200\u00b0C (fan forced). Place carrots on a lined baking tray and drizzle with honey and one tablespoon oil. Roast for 20-25 minutes or until very tender. Allow to cool slightly, then transfer to a small food processor with chickpeas, tahini garlic, lemon juice and remaining one tablespoon oil. Blitz until smooth and season with a pinch of salt.<\/li>\n\n\n\n<li>Place pork fillets, fat side down in a large frying pan over medium heat. Cook for 4-5 minutes to allow fat to render and become golden. Turn and cook pork for 3-4 minutes either side or until cooked to your liking.<\/li>\n\n\n\n<li>Meanwhile, make the za\u2019atar marinade in a medium bowl. Combine sumac, sesame seeds, oregano, salt and one tablespoon olive oil in a small bowl. When pork is cooked, transfer to the za\u2019atar bowl. Toss to coat and set aside to rest before slicing.<\/li>\n\n\n\n<li>Return pan to medium-high heat and cook broccolini in the pan with remaining one tablespoon olive oil for 2-3 minutes or until tender and lightly charred. Remove from heat and squeeze over lemon juice.<\/li>\n\n\n\n<li>Spread hummus between four serving plates. Arrange broccolini and sliced pork on top along with any remaining marinade.
