1 KG BEEF MINCE (80\/20 BLEND RECOMMENDED)
1 LARGE EGG
PINCH OF SALT
PINCH OF FRESHLY GROUND BLACK PEPPER
1\u20132 TBSP OIL (FOR COOKING)<\/p>\n\n\n\n

BURGER FILLINGS:
6 BRIOCHE BUNS, HALVED
6 RASHERS OF BACON
12 SLICES OF JACK CHEESE (OR SIMILAR MELTY CHEESE)
LETTUCE LEAVES)<\/p>\n\n\n\n

BURGER SAUCE:
200G KEWPIE MAYONNAISE
70G SHALLOT, FINELY CHOPPED
40G GHERKIN, FINELY CHOPPED
2 TBSP YELLOW MUSTARD
50G TOMATO KETCHUP<\/p>\n\n\n\n

combine all sauce ingredients in a bowl. mix well and refrigerate until ready to use (can be made a day ahead).<\/p>\n\n\n\n

in a large bowl, combine beef mince, egg, salt, and pepper. mix until just combined\u2014avoid overmixing. divide mixture into 6 equal portions and roll into balls.<\/p>\n\n\n\n

heat a bbq or hot plate to medium-high – add a little oil. place beef balls on the hot surface, then press down with a small pot or spatula to flatten.<\/p>\n\n\n\n

cook for 3\u20134 minutes per side or until desired doneness. add cheese slices during the final minute of cooking to melt. cook the bacon: grill or fry the bacon until crispy. set aside. lightly grill or toast the brioche buns cut-side down until golden. spread burger sauce on the bottom bun. add lettuce, beef patty with melted cheese, crispy bacon, more burger sauce, and the top bun.<\/p>\n\n\n\n
