1kg potatoes<\/p>\n\n\n\n

\u00bc cup olive oil<\/p>\n\n\n\n

2 sprigs rosemary<\/p>\n\n\n\n

\u00bd bunch thyme<\/p>\n\n\n\n

Pinch Salt

<\/p>\n\n\n\n

For the Green goddess dressing:<\/strong><\/p>\n\n\n\n

1 avocado, roughly chopped<\/p>\n\n\n\n

\u00bd cup reduced-fat Greek yoghurt<\/p>\n\n\n\n

small handful parsley leaves, plus extra to garnish<\/p>\n\n\n\n

small handful basil leaves<\/p>\n\n\n\n

1 garlic clove<\/p>\n\n\n\n

2 anchovies<\/p>\n\n\n\n

2 teaspoons Dijon mustard<\/p>\n\n\n\n

Method<\/strong><\/p>\n\n\n\n

  1. Preheat oven to 180C. Cut potatoes into bite sizes pieces. Place in a saucepan, cover with warm water and bring to the boil. Cook for 10-12 minutes or until very tender. Drain in a colander, allow to steam dry before tossing with olive oil, herbs and salt.<\/li>\n\n\n\n
  2. Place onto a large, lined baking tray and roast for 40-45 minutes or until a deep golden brown.<\/li>\n\n\n\n
  3. Meanwhile, combine avocado Greek yoghurt, parsley, basil, garlic, anchovies and mustard in a small food processor. Blitz until smooth, then taste for seasoning.<\/li>\n\n\n\n
  4. Serve roast potatoes with green goddess dressing and garnish with extra parsley.<\/li>\n<\/ol>\n\n\n\n
