These varieties love the climate there, particularly the heat (most traditional wine varieties all prefer cooler conditions), and we love the vibrancy of this vermentino. The acid and textural balance extends the palate making it a great food wine. Vermentino is characterised by its slightly salty or briny character (but in a good way!) which means it pairs absolutely perfectly with things like sashimi and cured kingfish!
