5 EGGPLANT
1 CUP CORN FLOUR GF
5 EGGS
1 CUP SHREDDED MOZZARELLA
1 CUP GRATED PARMESAN GRANA PADANO
1 LT TOMATO SUGO
( RECIPE BELOW OR YOU CAN USE BOUGHT PASSATA)
1 BUNCH FRESH BASIL
SALT & PEPPER<\/p>\n\n\n\n

slice the eggplant into \u00bd cm thick pieces<\/p>\n\n\n\n

beat the eggs and place in a tray, place the corn flour in a tray.<\/p>\n\n\n\n

heat oil in a frying pan, dip the eggplant into the corn flour then into the egg mix and fry until golden & place on paper towel. repeat process until all the eggplant is fried.<\/p>\n\n\n\n

get a baking dish and drizzle a little olive oil on the bottom, layer the eggplant, tomato sugo, mozzarella, parmesan, bread crumbs, basil, salt & pepper. repeat process to you reach the top of the baking dish.<\/p>\n\n\n\n

cover with baking paper & foil and bake in an oven at 160 degrees for 45 minutes<\/p>\n\n\n\n

uncover the parmigiana and sprinkle parmesan on top put back in hot oven or under griller until cheese is golden and serve with extra sugo, fresh basil & chopped parsley<\/p>\n\n\n\n

tip can be chilled overnight and cut into single serves when cold<\/p>\n\n\n\n

1 TBL GARLIC CRUSHED
2 ONIONS FINELY CHOPPED
\u00bd BUNCH BASIL FRESH
1 TSP PARSLEY OREGANO DRY
300ML OLIVE OIL<\/p>\n\n\n\n

heat oil in a small pot or saucepan, add the onion and cook until clear or glassy<\/p>\n\n\n\n

add the crushed tomatoes, garlic, basil, oregano and cook on a low heat for about 3 hours<\/p>\n\n\n\n
