6 KING GEORGE WHITING FILLETS<\/p>\n\n\n\n

2 CUPS BREAD CRUMBS<\/p>\n\n\n\n

PRAWN MOUSSE INGREDIENTS<\/p>\n\n\n\n

8 GREEN PRAWN TAILS, SHELLED & DEVEINED<\/p>\n\n\n\n

2 TBS CREAM<\/p>\n\n\n\n

1\/3 TSP TOMATO PASTE<\/p>\n\n\n\n

1 EGG WHITE<\/p>\n\n\n\n

1 TBS CRUSHED ICE<\/p>\n\n\n\n

SALT & PEPPER<\/p>\n\n\n\n

1 TBS CHOPPED CHERVIL & DILL<\/p>\n\n\n\n

chop the prawn meat into small pieces and chill in the freezer for 5 minutes.<\/p>\n\n\n\n

place the prawn meat, ice, tomato paste, egg white, salt, pepper, cream and blend to a smooth paste<\/p>\n\n\n\n

spread some prawn mousse on flesh side and dip into the breadcrumbs<\/p>\n\n\n\n

heat a pan and put in some oil and butter, on a low heat cook the fillet until golden brown on each side<\/p>\n\n\n\n

if possible put a lid on to help cook through or finish in the oven<\/p>\n\n\n\n

serve with a nice salad or rice, I like to serve some shellfish bisque with mine<\/p>\n\n\n\n

Tasting Notes: <\/strong>From the famous Yarra Yering winery in the Yarra Valley, their Warramate wines represent some incredible value for money. The wines are made with the same love and care of their more famous cousins, but using a wider range of vineyards for their fruit sourcing. This Chardonnay is a very complex and enjoyable wine, lemon verbena and crisp pear flesh, a richly textured and soft palate with a mineral-lemon freshness. A touch of oak, subtle and supportive of the fruit profile sits nicely in the background.
