CAPE JAFFA SNAPPER WITH SOY GINGER BUTTER SAUCE<\/p>\n\n\n\n

INGREDIENTS
1TBS FINELY SLICED GINGER
2 LIME LEAVES FINELY SLICED
2 TBS BUTTER
2 TBS SOY SAUCE
1 TBS ABC SOY (SWEET SOY KETCHAP MANIS)
\u00bd CUP CREAM
\u00bd CUP STONE GREEN GINGER WINE
1 SMALL SNAPPER FILLET
OIL<\/p>\n\n\n\n

heat a frying pan add a little oil<\/p>\n\n\n\n

place the skin side down in the hot oil and place a weight on the top<\/p>\n\n\n\n

cook on skin until the flesh starts to go white then remove from pan<\/p>\n\n\n\n

add the lime leaves, ginger, stones green ginger wine, soy & sweet soy to the pan and reduce slightly<\/p>\n\n\n\n

add the cream and combine , place the snapper back in the pan to finish the cooking<\/p>\n\n\n\n

remove the fish and place on your plate for service<\/p>\n\n\n\n

add the lime juice then the butter cubes and keep the pan moving or use a whisk to<\/p>\n\n\n\n

combine the butter with the sauce<\/p>\n\n\n\n

pour over the top and around the fish, garnish with some coriander leaves and chives<\/p>\n\n\n\n

serve with steamed rice<\/p>\n\n\n\n
