LEMON SYRUP
300G SUGAR
100ML LIMONCELLO
3 LEMONS JUICED
1 LEMON ZEST
1 LT WATER
500G MASCARPONE
6 EGGS
80G SUGAR
1-3 LEMONS JUICE & ZEST DEPENDING ON THE SIZE
4 LEAVES OF GELATINE (OPTIONAL)
1-2 PACKETS OF SAVOIARDI BISCUITS<\/p>\n\n\n\n

bring the sugar, lemon zest, lemon peel & water to the boil, then add the fresh lemon juice, boil for 5 minutes, allow to cool and add the limoncello.<\/p>\n\n\n\n

separate the eggs into 2 bowls
add the white to the mixer and whip adding half the sugar as they start to get stiff and beat until very stiff and shiny<\/p>\n\n\n\n

remove the white from the bowl and set a side in another bowl<\/p>\n\n\n\n

add the egg yolks, remaining sugar and a splash of limoncello, beat until very creamy and slightly thick<\/p>\n\n\n\n

add the lemon zest, some lemon juice and the mascarpone and beat until thick, but don\u2019t over whip it or it may split<\/p>\n\n\n\n

fold the egg yolk mix into the egg whites if your adding the gelatine leaves, soak in cold water, when soft put the in a microwave for a short time until they turn to liquid, now is the time to combine very quickly into the egg mix<\/p>\n\n\n\n

now you’re ready to assemble<\/p>\n\n\n\n

in a glass or serving dish dip the savoiardi biscuit in the lemon syrup very briefly and put a layer in your glass or dish then pipe the mascarpone cream over the top of the biscuits and repeat the process
garnish with lemon zest<\/p>\n\n\n\n
