TRADITIONAL AUSTRIAN SCHNITZEL<\/p>\n\n\n\n

INGREDIENTS
Veal Backstrap 200-300g pp
4 EGGS
1 CUP MILK
2 CUPS FLOUR
2 CUPS FINE BREADCRUMBS
SALT & PEPPER TO TASTE
CANOLA OR VEGETABLE OIL<\/p>\n\n\n\n

slice the veal into 1cm strip and bang out between plastic sheets until \u00bd the thickness<\/p>\n\n\n\n

set up the crumbing station with flour, egg & milk & breadcrumbs<\/p>\n\n\n\n

season the veal with salt & pepper dip in the flour them egg wash followed by crumbs, pat slightly place aside<\/p>\n\n\n\n

heat a pan 2cm high of canola or vegetable oil until 180 degrees<\/p>\n\n\n\n

carefully place the crumbed veal in the hot oil, shake the pan gently while frying and the turn the schnitzel over when golden on both side<\/p>\n\n\n\n

place on paper towel before serving<\/p>\n\n\n\n

1 TBS CHIVES
60ML WHITE VINEGAR
60ML VEGETABLE OR OLIVE OIL
SALT & PEPPER TO TASTE
1 PINCH SUGAR<\/p>\n\n\n\n

prepare the dressing and coat the cucumber slices & mix well<\/p>\n\n\n\n

POTATO SALAD
5 DESEREE POTATOES<\/p>\n\n\n\n

DRESSING
1TBS CHOPPED PARSLEY
1TBS CHOPPED CHIVES
200ML VEGETABLE OR OLIVE OIL
1 TBS FRENCH MUSTARD
\u00bd CUP WHITE VINEGAR SALT & PEPPER<\/p>\n\n\n\n

boil the potatoes starting from cold water until tender<\/p>\n\n\n\n

slice the potato into \u00bd cm slices<\/p>\n\n\n\n

prepare the dressing and coat gently<\/p>\n\n\n\n
