500G KINGFISH
SALT
PEPPER
4 LIME
1 EGGPLANT
\u00bd TSP CUMIN
OLIVE OIL
3-4 SPRIGS CORIANDER
1 AVOCADO<\/p>\n\n\n\n

cut the eggplant into small cubes<\/p>\n\n\n\n

heat some oil in a fry pan, add some oil and fry the eggplant<\/p>\n\n\n\n

cubes until golden and a sprinkle of cumin, salt & pepper<\/p>\n\n\n\n

cut the kingfish into small cubes<\/p>\n\n\n\n

cut the avocado into small cubes, combine with 1 lime juice, salt & pepper, set aside<\/p>\n\n\n\n

add the eggplant to the kingfish in a bowl and season with salt pepper, olive oil, 3 lime juice<\/p>\n\n\n\n

using a ring add the avocado first then layer the kingfish mix<\/p>\n\n\n\n

garnish with turmeric mayonnaise, chives,
coriander and sesame seed<\/p>\n\n\n\n

serve with rice crackers<\/p>\n\n\n\n

1 CUP MAYONNAISE<\/p>\n\n\n\n

fry the shallots in oil with turmeric until soft, add to the Mayonnaise<\/p>\n\n\n\n
