Professor\u2019s findings could change the way we treat obesity.<\/h3>\n

According to Professor Russell Keast, Deakin University’s head of Advanced Sensory Science, fat is detectable by humans as our \u201csixth taste\u201d. (The other five are sweet, sour, bitter, acid and savoury.)<\/p>\n

\u201cFat is an important component in food. We know it\u2019s got mouth-feel, we know it helps deliver flavor\u2026 and these are all things we appreciate in food.\u201d<\/p>\n

Prof Keast says it\u2019s the things that we like about fat in food that drive us to consume it. <\/p>\n

\u201cIf somebody is sensitive to fat \u2013 if they can actually taste the fat in the food \u2013 they stop eating the food sooner than somebody who\u2019s insensitive. Somebody who can\u2019t taste the fat in the food over consumes that food.\u201d<\/p>\n

Prof Keast’s findings have been published worldwide, and he spoke to Jeremy Cordeaux about how this discovery will assist with the treatment of obesity and change the way we produce food.<\/span><\/p>\n
