Ingredients<\/strong><\/p>\n

Red cabbage<\/strong><\/p>\n

1 kg \u2028red cabbage<\/p>\n

olive oil<\/p>\n

1\u2028onion, peeled and diced<\/p>\n

2\u2028 apples, peeled and finely diced<\/p>\n

2 tbsp\u2028 apple cider vinegar<\/p>\n

1\u2028fresh bay leaf<\/p>\n

2\u2028 cloves<\/p>\n

80 ml red wine<\/p>\n

Mashed potatoes<\/strong><\/p>\n

1 kg\u2028 potatoes<\/p>\n

120 g\u2028 butter<\/p>\n

pinch of nutmeg<\/p>\n

parsley, chopped for garnish<\/p>\n

Schnitzel<\/strong><\/p>\n

4\u2028 veal steaks (750 g), trimmed<\/p>\n

2 tbsp\u2028 gluten free plain flour<\/p>\n

2\u2028eggs<\/p>\n

100 g \u2028gluten free breadcrumbs<\/p>\n

100 ml \u2028oil, for frying<\/p>\n

40 g\u2028butter, for frying<\/p>\n

salt and pepper<\/p>\n

1\u2028lemon, cut in 4 wedges<\/p>\n

Method<\/strong><\/p>\n

Slice the red cabbage finely. Heat oil in a heavy based pan over medium heat. Add onions, apples. Cook until onions are soft and golden, Add sliced cabbage and vinegar. Cook cabbage slowly for 10 minutes. Add 250 ml (1 cup) water, bay leaf and cloves, and season to taste. Cover and cook slowly for 30 to 45 minutes until soft. Add red wine and mix well.<\/p>\n

To prepare the potatoes, bring a saucepan of salted water to a boil, add potatoes, reduce heat and simmer, until tender. Drain and set aside for a minute 2 minutes, stirring. Using a potato ricer, mash potatoes, add butter beat with a wooden spoon until fluffy. Add nutmeg, season with salt and pepper.<\/p>\n

Meanwhile cut pork steaks in half horizontally. Pound each steak to thin<\/p>\n

Whisk eggs in a bowl, place flour in a second bowl, season to taste, and place breadcrumbs into a third bowl. Dust pork with flour, dip in egg and coat in breadcrumbs. Heat half the oil and butter in a very large frying pan over medium-high heat. Fry half the coated pork for a few minutes on each side or until golden. Drain on paper towel. Repeat with remaining ingredients. Serve schnitzel with mashed potatoes, parsley, red cabbage and lemon wedges.<\/p>","protected":false},"excerpt":{"rendered":"
