“The lamb chop – such an australian icon – this is my upmarket version.” ~Rilka<\/p>\n

Serves 2<\/strong><\/p>\n

Ingredients<\/strong><\/p>\n

6 lamb chops (ask your butcher to beat them)<\/p>\n

\u00bc bulb of fennel<\/p>\n

1 sprig rosemary<\/p>\n

1 clove garlic – minced<\/p>\n

1 lemon – juiced<\/p>\n

1 lemon – rind<\/p>\n

‘pinch’ salt and pepper<\/p>\n

‘glug’ olive oil<\/p>\n

Method<\/strong><\/p>\n

In a food processor add the fennel, rosemary, garlic, lemon rind and salt and pepper.<\/p>\n

Once you have pulsed the above ingredients add a drizzle of oil until a paste has been formed. Season the chops and place them in a glass dish. Then spread the mixture on each side very well and then leave overnight in the fridge to marinate.<\/p>\n

One hour before you are ready to cook the chops bring them to room temperature and then grill to your liking.<\/p>\n

Serve with your favourite potato dish and salad.<\/p>","protected":false},"excerpt":{"rendered":"
