People who taste it for the first time are surprised when I tell them it is made with chestnuts but fall in love with it once they have had their first spoonful.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 tins whole chestnuts<\/p>\n<p>1 tin chestnut &#8211; puree<\/p>\n<p>1 litre chicken stock<\/p>\n<p>3 brown onions &#8211; finely diced<\/p>\n<p>4 sprigs thyme<\/p>\n<p>&#8216;glug&#8217; olive oil<\/p>\n<p>&#8216;pinch&#8217; salt and pepper<\/p>\n<p>1 bunch parsley \u2013 stalks<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Heat the oil in a large saucepan and add the onions. Cook until transparent &amp; then add the chestnuts, stock, parsley stalks thyme, salt, and pepper.<\/p>\n<p>Bring to the boil then reduce and simmer for 20 minutes until the chestnuts begin to breakdown.
