{"id":29356,"date":"2017-07-17T00:00:00","date_gmt":"2017-07-17T00:00:00","guid":{"rendered":"https:\/\/cms.fiveaa.com.au\/uncategorized\/pork-schnitzel-with-mashed-potatoes-and-red-cabbage\/"},"modified":"2017-07-17T00:00:00","modified_gmt":"2017-07-17T00:00:00","slug":"pork-schnitzel-with-mashed-potatoes-and-red-cabbage","status":"publish","type":"post","link":"https:\/\/cms.fiveaa.com.au\/show\/pork-schnitzel-with-mashed-potatoes-and-red-cabbage\/","title":{"rendered":"Pork Schnitzel with mashed potatoes and red cabbage"},"content":{"rendered":"<p><em><strong>Thanks to Rilka Warbanoff and Foodland.<\/strong><\/em><\/p>\n<p><strong>Serves 8<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><u>Red cabbage<\/u><\/p>\n<p>1 kg \u2028red cabbage<\/p>\n<p>olive oil<\/p>\n<p>1 \u2028onion, peeled and diced<\/p>\n<p>\u2028 apples, peeled and finely diced<\/p>\n<p>2 tbsp\u2028 apple cider vinegar<\/p>\n<p>\u2028fresh bay leaf<\/p>\n<p>80 ml red wine<\/p>\n<p><u>Mashed potatoes<\/u><\/p>\n<p>1 kg\u2028 potatoes<\/p>\n<p>120 g\u2028 butter<\/p>\n<p>parsley, chopped for garnish<\/p>\n<p><u>Schnitzel<\/u><\/p>\n<p>4\u2028 pork loin steaks &nbsp;trimmed<\/p>\n<p>2 tbsp\u2028 gluten free plain flour<\/p>\n<p>2\u2028eggs<\/p>\n<p>100 g \u2028gluten free breadcrumbs<\/p>\n<p>100 ml \u2028oil, for frying<\/p>\n<p>40 g\u2028butter, for frying<\/p>\n<p>salt and pepper<\/p>\n<p>1\u2028lemon, cut in 4 wedges<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Slice the red cabbage finely. Heat oil in a heavy based pan over medium heat. Add onions, apples. Cook until onions are soft and golden, Add sliced cabbage and vinegar. Cook cabbage slowly for 10 minutes. Add 250 ml water, bay leaf and, season to taste. Cover and cook slowly until soft. Add red wine and mix well.<\/p>\n<p>Boil the potatoes until tender and using a potato ricer mash the potatoes add the butter to the mash season stir and keep warm until you have cooked the meat.<\/p>\n<p>Meanwhile cut pork steaks in half horizontally. Pound each steak to thin<\/p>\n<p>Whisk eggs in a bowl, place flour in a second bowl, season to taste, and place breadcrumbs into a third bowl. Dust &nbsp;the pork with flour, dip in egg and coat in breadcrumbs.&nbsp; Heat half the oil and butter in a very large frying pan over medium-high heat. Fry half the coated pork for a few minutes on each side or until golden. Drain on paper towel. Repeat with remaining ingredients.
