{"id":29685,"date":"2017-05-15T00:00:00","date_gmt":"2017-05-15T00:00:00","guid":{"rendered":"https:\/\/cms.fiveaa.com.au\/uncategorized\/chicken-cacciatore\/"},"modified":"2017-05-15T00:00:00","modified_gmt":"2017-05-15T00:00:00","slug":"chicken-cacciatore","status":"publish","type":"post","link":"https:\/\/cms.fiveaa.com.au\/show\/chicken-cacciatore\/","title":{"rendered":"Chicken cacciatore"},"content":{"rendered":"<p><em>Thanks to Rilka Warbanoff and Foodland.<\/em><\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>6 chicken legs, cut into thigh and drumstick<\/p>\n<p>\u00bc cup extra-virgin olive oil<\/p>\n<p>2 medium brown onions, peeled and chopped<\/p>\n<p>2 cloves garlic, peeled and chopped<\/p>\n<p>1 \u00bd cups dry white wine<\/p>\n<p>400g can whole tomatoes, chopped with juices<\/p>\n<p>1 \u00bd cups chicken stock<\/p>\n<p>\u00bd cup black olives<\/p>\n<p>1 bay leaf<\/p>\n<p>2 sprigs fresh rosemary leaves<\/p>\n<p>2 tbsp chopped flat-leaf parsley<\/p>\n<p>sea salt<\/p>\n<p>freshly ground black pepper<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Heat oil in a large pan over medium to high heat. Add onions, garlic and sea salt and cook, stirring occasionally, for about 10 minutes until soft. Remove onions from the pan, add the chicken and fry, turning pieces to brown evenly.<\/p>\n<p>Return&nbsp; the&nbsp; onions back into the pot , add wine and cook until wine reduces to a couple of tablespoons.<\/p>\n<p>Add tomatoes with their juice, chicken stock, olives, bay leaf and rosemary. Reduce heat to low, and simmer for 30-40 minutes.<\/p>\n<p>The chicken should be cooked but not falling off the bone, and the sauce should have thickened.
