{"id":30640,"date":"2016-09-12T00:00:00","date_gmt":"2016-09-12T00:00:00","guid":{"rendered":"https:\/\/cms.fiveaa.com.au\/uncategorized\/matthew-evans-the-gourmet-chef\/"},"modified":"2016-09-12T00:00:00","modified_gmt":"2016-09-12T00:00:00","slug":"matthew-evans-the-gourmet-chef","status":"publish","type":"post","link":"https:\/\/cms.fiveaa.com.au\/show\/matthew-evans-the-gourmet-chef\/","title":{"rendered":"Matthew Evans &#8211; The Gourmet Chef"},"content":{"rendered":"<h3>The Gourmet Chef&nbsp;Matthew Evans joined Milton and Mark this week with a beautiful fresh spring recipe &#8211;&nbsp;Crunchy Almond Asparagus.<\/h3>\n<p>Fresh from filming season 4 of The Gourmet Chef, soon to air on SBS, you can find Matthew at Fat Pig Farm in Hobart or look out for his new documentary &#8220;For The Love of Meat&#8221;.<\/p>\n<p><strong>Crunchy Almond Topping for Asparagus<\/strong><br><br \/>\n\t(makes enough for 2 bunches, about 4 serves)<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>about 1\/4 cup extra virgin olive oil<br><br \/>\n\t2-3 cloves garlic, whole<br><br \/>\n\tabout 1 cup very coarse fresh breadcrumbs made by pulsing crustless bread in a food processor (chunky bits are fine)<br><br \/>\n\t100g whole almond kernels, gently crushed<br><br \/>\n\tabout 1\/2 cup flat leaf parsley, roughly chopped<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Heat 3\/4 of the oil gently in a pan and add the garlic. Cook for a minute to allow the flavours to diffuse a little. Add the breadcrumbs and almonds and stir or toss regularly to cook evenly. You want crisp, lightly browned bread, that\u2019s why chunky crumbs are better than fine. Slosh in some more oil if it\u2019s really dry, and season with a little salt and pepper.
