For the Dressing:<\/strong><\/p>\n

3\u20444 cupcanola oil

\n\t1\u20444 cup extra-virgin olive oil

\n\t1\u20444 cup red wine vinegar

\n\t1 tblspn fresh lemon juice

\n\t3\u20444 tspn dry mustard

\n\t1\u20442 tspn worcestershire sauce

\n\t1 clove garlic – minced

\n\t‘pinch’ salt and freshly ground black pepper, to taste<\/p>\n

For the Salad:<\/strong><\/p>\n

1\u20442 head iceberg lettuce – shredded

\n\t1\u20442 head romaine lettuce – chopped

\n\t1\u20442 bunch watercress – some of the stems trimmed & chopped

\n\t2 ozs blue cheese – crumbled

\n\t6 strips cooked bacon – roughly chopped

\n\t3 hard-boiled eggs – peeled and cut into 1\u20442″ cubes

\n\t2 medium tomatoes – peeled, seeded, and cut into 1\u20442″ cubes

\n\t1 boneless skinless chicken breast, cooked and cut into 1\u20442″ cubes

\n\t1 avocado – peeled, pitted, and cut into 1\u20442″ cubes

\n\t‘pinch’ salt and freshly ground black pepper, to taste

\n\t2 tblspns minced chives<\/p>\n

Method:<\/strong><\/p>\n

To make the dressing: Combine the canola oil, olive oil, vinegar, lemon juice, mustard, worcestershire sauce and garlic in a blender. Pur\u00e9e the ingredients to make a smooth dressing, and season with salt and pepper. Set the dressing aside.<\/p>\n

Make the salad: On a large platter, combine the iceberg and romaine lettuces along with the watercress. Arrange the blue cheese, bacon, eggs, tomatoes, chicken, and avocado on top of the greens in neat rows. To serve, drizzle the salad with dressing, season with salt and pepper, and top with chives. Alternatively, toss everything together in a bowl.<\/p>\n
