\u00bd CUPTHAI BASIL
\u00bd CUP MINT<\/p>\n\n\n\n

NUT MIX
1 TBS ROASTED PEANUTS CRUSHED
1 TBS FRIED SHALLOTS
1 TBS BLACK & WHITE SESAME SEEDS<\/p>\n\n\n\n

DRESSING
30G GARLIC
15G CORRIANDER ROOT
20G GALANGAL
250G PALM SUGAR
100ML FISH SAUCE
100ML SWEET CHILI SAUCE
200G LONG GREEN CHILIES 500ML LIME JUICE
30G GREEN BIRDS EYE CHILIES (OPTIONAL)<\/p>\n\n\n\n

pound the garlic, coriander root, chillies and galangal to a uniform paste in a mortar and pestle or blender<\/p>\n\n\n\n

add the palm sugar and fish sauce & sweet chilli sauce incorporating well into the other mixture<\/p>\n\n\n\n

pour over the lime juice and mix<\/p>\n\n\n\n

the dressing should taste hot, sweet, sour and salty<\/p>\n\n\n\n

add more palm sugar to if needed to make it sweeter or fish sauce to make it salty<\/p>\n\n\n\n

ASSEMBLING THE SALAD
put all the salad ingredients in a bowl, add the minced chicken then dress, you won\u2019t need all the dressing so add a small amount at a time<\/p>\n\n\n\n
