APPLE TARTE TATIN<\/p>\n\n\n\n

Makes 6 ramekins<\/p>\n\n\n\n

INGREDIENTS
8 GRANNY SMITH APPLES
CINNAMON SUGAR
WHITE SUGAR
WATER<\/p>\n\n\n\n

boil the sugar and water until it becomes a golden toffee<\/p>\n\n\n\n

carefully line the ramekins with the toffee peel core and slice
the apples into thin slices<\/p>\n\n\n\n

layer the apple until you reach double the height of the
ramekin, sprinkling cinnamon sugar after ever 2 layers<\/p>\n\n\n\n

cover with foil, place on a baking tray and bake in a<\/p>\n\n\n\n

140-degree oven for 1 hour & 15 minutes<\/p>\n\n\n\n

cool down in fridge or allow to cool in kitchen until room temp<\/p>\n\n\n\n

SWEET SHORT CRUST PASTRY
2 \u00bc CUPS FLOUR
1\/3 CUP CASTER SUGAR
175G BUTTER SOFT
2 EGG YOLKS
2 TBS WATER<\/p>\n\n\n\n

combine all ingredients in a mixer and mix until combined<\/p>\n\n\n\n

don\u2019t over mix<\/p>\n\n\n\n

roll out between baking paper to \u00bd cm in thickness, allow to
rest in fridge for 30min<\/p>\n\n\n\n

cut into 5cm discs and bake at 180 for 10-12 minutes<\/p>\n\n\n\n

BUTTERSCOTCH SAUCE
500G WHITE SUGAR
250ML WATER
500G CREAM
250G BUTTER DICED<\/p>\n\n\n\n

boil the water, add the sugar and cook until it become a
golden toffee<\/p>\n\n\n\n

quickly whisk in the butter and cream, bring to the boil and set
aside<\/p>\n\n\n\n

ASSEMBLING THE DISH<\/p>\n\n\n\n

drain the excess liquid from the ramekin, place the pastry on
the bottom and turn out onto plate<\/p>\n\n\n\n

pour some warm butterscotch sauce over the top and serve
with some double cream<\/p>\n\n\n\n

PAIR WITH A 2022 ELDERTON GOLDEN SEMILLON<\/p>\n\n\n\n
