INGREDIENTS
1 TIN ORTIZ OR RIZZOLLI ANCHOVIES
4 SLICES BRIOCHE BREAD
4 HARD BOILED EGGS GRATED
1 TBS CHOPPED CHIVES
1 TBS CHOPPED PARSLEY
1 FRENCH SHALLOTS FINELY CHOPPED
3 TBS MAYONNAISE
SALT & PEPPER<\/p>\n\n\n\n

EGG MIX
in a bowl combine the egg, herbs, salt, pepper, shallots and mayonnaise<\/p>\n\n\n\n

put the mix into a disposable piping bag<\/p>\n\n\n\n

cut the crust off the brioche then cut into 8×2 cm fingers<\/p>\n\n\n\n

toast or fry the brioche in clarified butter<\/p>\n\n\n\n

pipe the egg mix on the brioche, then carefully place the anchovy on top<\/p>\n\n\n\n
